Compliance Framework
TR19 Grease
TR19 Grease is the dedicated specification governing the inspection and hygiene of commercial kitchen extract systems, written specifically to manage fire risk arising from grease accumulation.
Purpose
TR19 Grease establishes how grease deposit within canopies, filters, plenums, ductwork and fans must be measured, controlled and certified – with the headline threshold of 200 microns of accumulated grease as the trigger for intervention.
Core requirements
- Wet film thickness testing at agreed sample points
- Risk-based inspection frequency by kitchen usage
- Full system hygiene management to below 200 microns
- Photographic evidence indexed to access points
- Certificate of compliance on completion
Responsibilities
- Site Responsible Person under the Fire Safety Order 2005
- Operations / kitchen manager – day-to-day cleanliness
- Compliance partner – inspection, certification and reporting
- Insurer – evidence-led policy compliance
Compliance implications
- Insurance claim refusal following kitchen fires where evidence is lacking
- Environmental Health attention during routine inspections
- Increased fire load and propagation risk via extract systems
- Reputational and business-interruption exposure
Recommended inspection frequencies
| Risk / classification | Suggested cadence |
|---|---|
| Heavy use (12-16 hrs/day) | Every 3 months |
| Moderate use (6-12 hrs/day) | Every 6 months |
